This goat eggplant salad is a vegetarian dish made with arugula, just lukewarm cooked eggplant, pieces of goat cheese, cherry tomatoes and basil. Full of flavor for this tasty vegetarian salad with Mediterranean flavors.

Ingredients

1 eggplant
2 tbsp of frying oil
2 handfuls arugula
10 basil leaves
3 small dry goat cheese
10 cherry tomatoes
1 serving for 2 people of vinaigrette

Instructions

Preheat the oven to 190 ° C.
Cut the eggplant into small pieces and put it in a gratin dish, pour olive oil over it and bake for 40 minutes until the pieces are tender.

Cut the cherry tomatoes in half and the goat cheese into small pieces.
Prepare the salad by mixing the cherry tomatoes, goat cheese, basil, dressing and warm eggplants.
Adjust the seasoning and serve immediately.
