The soba noodle soup and smoked salmon is a Japanese soup. It consists of a clear broth, in which we add buckwheat noodles (soba noodles), bok choy and bites of smoked salmon rolled in sheets of nori seaweed. This quick, simple and gourmet recipe is also really light because it contains no fat other than smoked salmon. It is also a dish to make on a weekday evening that requires very little preparation and quite original, yum!
The extra thing:
- Add soy sauce, sesame seeds and chilli (or wasabi) to the broth for more flavor.
- Replace the bok choy with fresh spinach leaves.
Ingredients
150 g soba noodles | |
2 slices smoked salmon | |
2 sheets of nori seaweed | |
1 bok choy | |
1 liter chicken broth or miso soup |
Instructions

Bring the broth or miso soup to a boil, drop in the soba noodles. Remove from heat and cover.

Arrange 1 slice of smoked salmon on a seaweed and roll on itself then seal by moistening the edge of the sheet. Cut slices 1.5 to 2cm thick using a slightly wet knife. Reserve the salmon bites.

Finely chop the bok choy.
Add the bok choy to the broth, arrange the salmon bites and serve immediately. |
