Introduction

Stracciatella is a soup originating in Italy with eggs. To be honest, I don’t know if there’s anything easier to make than this soup. It consists of a flavored broth with eggs. This soup is perfect when you don’t have time to cook, it’s tip top for children.
Ingredients
2 egg | |
20 g grated parmesan | |
20 g breadcrumbs | |
1 tbsp parsley haché | |
1 liter vegetable broth |
Instructions

Heat the broth in a saucepan over medium heat.
In a salad bowl or a bowl, break the eggs, add the breadcrumbs and the parmesan. Mix with a fork. |

Take about 10cl of very hot broth from the saucepan and pour over the eggs.
Whisk with fork for 2 minutes. |

Pour the mixture into the saucepan, whisking and cook for 5 minutes.
Sprinkle with chopped parsley. To serve. |
