Kottu partha is a typical dish from southern India. These are parathas (flaky Indian flatbreads) cut into small pieces and sautéed like pasta with vegetables and spices. It is a quick, very simple and delicious street food dish.

2 shallots | |

1 tsp ground turmeric |

Peel and chop all the vegetables using a food processor. All vegetables should be finely chopped.

Pour the oil into a sauté pan, bring the sauté pan to medium/low heat.
Incorporate the vegetables with the spices, mix and cover. Leave to cook for 15 mins. The vegetables should be tender. Meanwhile, roll the parathas and thinly slice them. |

Crack the eggs into a bowl and beat into an omelet.
Remove the lid from the sauté pan and pour in the beaten egg little by little, sauté using a wooden spoon or a spatula so that the omelette is in a filament. |
