Egg curry puffs are small Indian puff pastry turnovers stuffed with Indian sauce and hard-boiled egg. It is a specialty of southern India that is served for breakfast or as a snack with tea. Nothing prevents us from consuming it otherwise, with a salad or a soup for a light meal. The sauce is spicy and very fragrant. The egg brings sweetness to this specialty that you eat with your fingers.

Ingredients

2 cloves of garlic | |
2 shallots | |
2cm ginger | |
200g puff pastry | |
2 tbsp sunflower oil | |
1 tbsp garam masala | |
1 tsp ground turmeric | |
15 cl of tomato coulis | |
0.5 tsp pepper | |
0.5 tsp chilli fort ou doux selon le goût | |
1 egg yolk | |
1 tbsp of water |

Pour water into a saucepan and put the eggs in it. Bring to a boil and cook for about 10 minutes until the eggs are hard. When cooking is complete, peel the eggs under running cold water then set aside on a plate covered with absorbent paper.

Peel and chop the shallot, garlic and ginger together.
Pour the oil into a casserole dish and bring to medium heat, add the shallot/garlic/ginger mixture and the spices. Sauté for 5 mins. Add the tomato coulis and cook for another 5 minutes. Adjust seasoning. |

Cut the puff pastry according to the number of turnovers desired using a 12cm round cookie cutter.
Lay out the tomato sauce with spices and place half a hard-boiled egg on it. Shape the slipper by folding down 2 sides to form a sort of cone. |

Place the turnovers on a baking sheet lined with parchment paper.
Mix the egg yolk with the water. Brush the slippers with the gilding using a brush. |

Preheat the oven to 200°C.
Bake for about 15 minutes until the turnovers are cooked and golden. Serve immediately. |
