The sun brioche is shaped like a pie. These are several superimposed brioche discs with twisted spokes. It is garnished with strawberry jam. It is very good for a breakfast or a gourmet snack.

1 sachet of baker’s yeast | |
200 ml of milk | |
2 egg | |
120 g butter at room temperature | |
120 g strawberry jam | |

Instructions

In a bowl, combine the flour, sugar and salt. Make a well in the center.
Dilute the yeast in a little lukewarm milk. Pour this mixture into the well along with the rest of the milk and the lightly beaten eggs. |

Knead the dough for ten minutes. Add the butter in small pieces and knead again until the butter is well incorporated.
Cover with a clean cloth and let rise for 1h30 to 2h in a warm and humid place. |

Divide the dough into 4 pieces of approximately 250 g and let rise again for 30 minutes. Roll out the 4 dough pieces on a diameter of about 25 cm using a rolling pin.
Place a first disc of dough on baking paper. |

Spread with jam, leaving about 1 cm from the edges then place a second disc of dough. Repeat the operation twice and finish with a disc of dough. Solder the edges of the brioche.

Place a small glass in the center of the brioche and cut it into 16 quarters without cutting the center. Take a strip of dough in each hand and turn both times in opposite directions. That in the right hand to the right and that in the left hand to the left. Proceed in this way for each pair of bands.

Dissolve the egg yolk and the water. Brown the brioche.
Bake for 20 to 25 minutes in a hot oven at 190 ° C. Let cool before serving. |
