Spaëtzles are fresh Alsatian pasta rich in eggs. It is an ideal accompaniment for dishes in sauce and for festive meals. Very good quality fresh eggs are a credit to this simple, popular and gourmet dish. It’s a quick recipe to make and it would be a shame to deprive yourself of it.
For this recipe, I used:
- A spaetzle grater
The extra thing:
- They can be served as is or browned in butter.
Ingredients
750g flour j’ai utilisé de la t55 | |
40 cl of sparkling water | |
6 egg | |
1 pinch of nutmeg |
Instructions

Mix all the ingredients except the butter in a bowl using a wooden spoon to obtain a homogeneous mixture. The dough should be elastic and runny.

Bring a large pot of water to a boil.
Place a spaetzle grater over the water. Pour the paste into a spëtzle grater and grate so that the spaëtzles fall directly into the water. Cook for 3 mins. |

Drain the spaëtzles, season as desired and serve.
