This blueberry kiwi pie is quite simple to make. It is composed of a sweet almond pastry, pastry cream, fresh blueberries and fresh kiwis. It really is a simple and delicious dessert.
The extra thing:
- Add a blueberry compote to the bottom of the pie before adding the pastry cream for a more fruity taste.

Prepare the sweet pastryMix the ingredients for the sweet dough in a bowl and work by hand to obtain a homogeneous mixture. It is possible to do this step in the tank of a robot. Make a ball with the dough. Film the dough and reserve in the refrigerator for 1 hour.

Preheat the oven to 170°C. Cover a baking sheet with parchment paper and place a pie ring (here 20cm in diameter) on it. Roll out the dough, prick it and line the tart ring.

Put the pie shell in the oven and cook for 10 to 15 minutes. When the dough is cooked, take out and let cool on a wire rack.

Prepare the pastry creamPut the egg yolks in a bowl and pour the powdered sugar.
Whisk until the mixture whitens then add the cornstarch slowly. Whisk until the mixture is homogeneous. |

Heat the milk in a saucepan and turn off the heat when it simmers.
Then pour it into the bowl and whisk gently. |

The cream will start to thicken.
If it is too liquid, transfer it to the saucepan and put on low heat while forming “8” with the whisk. The cream is finished when it is thick. Film in contact and let cool. |

DressagePeel the kiwis and cut them with a mandolin.
Arrange the blueberries all around the pie to make a first circle. Then make a circle with the kiwi slices. Form another circle of blueberries then one of kiwis. Finish with a few blueberries in the center. |

Reserve in the refrigerator 2 hours before serving.
