We like the king cake a lot at home. Usually colleagues and children’s classes also benefit.
Each year I make different ones and this year I really wanted it to be fruity. So I opted for a garnish made with very vanilla steamed applesauce.

Super simple, the garnish is less fatty than the traditional frangipane and above all very tasty. Here is my king cake.

Ingredients
400g puff pastry divided into 2 dough pieces | |

1 vanilla pod | |
1 sachet of vanilla sugar | |
1 egg yolk |

Peel and cut the apples into pieces.
Steam for a maximum of 10 minutes. Cut the vanilla pod and reserve the seeds. Mash the cooked apples, add the seeds of the vanilla pods and pour in the vanilla sugar. Mix and set aside. |

Preheat the oven to 180 ° C.

Line a baking sheet with parchment paper.
Roll out the 1st puff pastry (you can give it the shape you want). Pour in the vanilla apple puree starting from the center and leaving a 2-3cm edge all around. |

Slightly wet the edge with water and place the 2nd puff pastry on top. Seal by pinching with fingers or a knife. Brush with egg yolk using a brush. Make patterns with a knife.
