Introduction

Goat cheese cromesquis are small breaded dumplings. They crisp well on the outside and are runny to the core.
The extra thing:
- It can be made with other cheeses, such as cheddar or mozzarella or even risotto.
Ingredients
3 goat droppings not too dry | |
10 cl liquid fresh cream | |
1 egg | |
50 g breadcrumbs | |
frying oil | |

Cut the goat cheese into pieces.
In a saucepan, heat 10 cl of liquid cream over low heat and melt the droppings completely, stirring often with a spatula and taking care not to let the goat cheese burn. Pepper. Season. |

Once the preparation is homogeneous, fill the silicone molds (pop cake molds) in half-spheres.
Leave to harden and chill in the freezer for at least 4 hours. |

Heat a skillet over medium heat.
Turn out all the half-spheres and assemble the half-spheres in pairs, taking care to heat and smooth the flat edge of each half-sphere to make perfect spheres. Refrigerate for approximately 1 to 2 hours. |

Separate the egg whites, beat them but without trying to make them rise. You just have to make them smooth.
Filter the whites with a strainer to let only the liquid through. Discard the rest. |

Roll the spheres in it then in the breadcrumbs.
Leave to dry for 15-20 minutes and repeat the operation a second time for a second coat. |

Leave to cool for one hour. |

Prepare a fryer with oil at 190°C.

Gently place the cromesquis, leaving spaces and fry until brown (about 3 minutes). Repeat the operation according to the number of cromesquis and the capacity of the fryer
