The Avocado Spinach Goat Cheese Croque is a hot sandwich made with wholemeal sandwich bread, melted goat cheese, avocado and baby spinach leaves. It’s super quick to make, tasty and light. I had made these croques with a panini machine but you can also make them in the oven or in the pan depending on what you have on hand.

- A panini plate

- I served the croques with a simple salad and thinly sliced mushrooms
- Find my croques and / or toast recipes
Ingredients
4 slices of wholemeal bread | |
4 goat cheese | |
1 avocado | |
1 handful of baby spinach leaves | |
3 tbsp of melted butter |
Instructions

Spread the slices of bread with melted butter on the outer sides.
Peel and thinly slice the avocado. |

Take a slice of white bread, place 1/4 of the avocado, 1/4 of the baby spinach leaves and 1 slice of goat cheese. Season.
Close the croque with another slice of sandwich bread. Renew until exhaustion. |

Preheat the panini maker and arrange the croques. Close the appliance and cook the croque so that they are golden brown.
Serve immediately. |
