The fruit coulis is essential to accompany a panna cotta, fromage blanc or ice cream. Here it is a red fruit coulis that goes wonderfully with an ice cream.
1 portion corresponds to 40 cl of fruit coulis.
The extra thing:
- Replace the red fruits with a mixture of pineapple, passion fruit, mango, apricots…
- Be sure to adjust the sugar according to the acidity of the fruit.
- You can use frozen fruit, which you still use frozen.
- You can portion grout into ice cube molds and put them in the freezer to always have grout on hand.

In a saucepan, put the berries, lemon juice and sugar together over medium heat.
Leave to cook for 30 minutes, stirring regularly. |

Mix the preparation and filter it by passing it through a sieve. Let cool and serve. |
