Introduction

French meringue is a basic pastry that can be used in many desserts. The particularity of the French meringue lies in its super simple composition of egg whites and sugar, unlike the Swiss meringue (in a bain-marie) or Italian (in boiled sugar). The French meringue is crispy and melts very quickly in the mouth.
1 serving is approximately 15 pieces of French meringue.
The extra thing:
- It can be consumed with a hot drink, a fruit salad or even an ice cream.
- If you use a whisk, be careful to beat the egg whites well with a planetary movement throughout the bowl so that it is uniform.
- It can be flavored with vanilla, chocolate, coconut, lime zest…
- For the egg whites to rise even better, take them out of the refrigerator 2 hours before working them.

Preheat the oven to 150°C.

Whisk the egg whites by adding about 2 tablespoons of caster sugar.
As the egg whites rise, pour in the rest of the caster sugar. Continue whisking until smooth and airy. |

Sift the 100g of icing sugar over the bowl or over the bowl of the food processor.
Mix gently using the spatula to obtain a homogeneous mixture. |

Pipe on a baking sheet lined with parchment paper in the desired shape and sprinkle with 20g of icing sugar.
Bake for 10 minutes at 150°C then 2 hours at 90°C. To serve. |
