Filet mignon with raisins is a quick and tasty dish. Filet mignon is a very tender part of the pork. In this recipe, the presence of grapes brings a lot of taste and sweetness.
The extra thing:
- Replace the raisins with dried apricots.
- Serve with green beans, pasta or rice.
- This sauce can accompany white meats in general.
Ingredients
1 pork tenderloin | |
2 tbsp grapeseed oil | |
2 tbsp blond raisins | |
2 tbsp black raisins | |
4 tbsp heavy cream | |
1 tbsp mustard | |
2 tbsp cognac |
Instructions

Cut the filet mignon into 2cm thick medallions.
Heat the oil in a high-sided pan and brown the filet mignon for 5 minutes over medium heat. |

Turn them over, season them and brown them on the other side for 5 minutes as well.
Remove the medallions and keep them warm. |

In the same pan, pour the raisins, crème fraîche and cognac, season.
Reduce to half over medium heat, or even over high heat for 5 minutes. |

When the sauce is thickened, add the mustard.
Mix well then stop cooking. Cover the medallions with this sauce, serve. |
