The pepper del Piquillo (or piquillo) is a small sweet pepper originating from the French or Spanish Basque country. This recipe for piquillos stuffed with cod consists of piquillos stuffed with a preparation based on cod and potatoes. The stuffing is creamy and tasty.

- Serve with a sauce made with piquillo peppers and cream
- Serve on a slice of toasted bread for a tapas atmosphere
Ingredients
8 piquillos | |
3 clove of garlic | |
1 bouquet garni | |
300 g desalted cod | |
1 liter of milk | |
150g cooked potatoes |
Instructions

Peel and chop the garlic.
Pour the milk into a saucepan. Add the garlic and the bouquet garni. Bring to medium heat. |

Add the cod to the pan and cook for 5 to 10 min.

Mash the cooked potatoes with a fork and add the cooked cod. Pour about half of the milk used to cook the cod over the potato/cod mixture. Mix to obtain a creamy preparation.

Stuff the piquillos and serve.
Reserve in the refrigerator 2 hours before serving. |
