Coconut rocks are super simple and very quick little bites to make. It is ideal to accompany a coffee or a tea. It’s a good way to use up egg whites that you don’t know what to do with. This recipe allows you to make soft rocks in the center and just caramelized on the outside.

1 portion corresponds to approximately 10 coconut rocks.

The extra thing:

  • For an ultra-fast gourmet coffee, serve the rocks with crispy chocolate praline rocks.
  • Coconut rocks will keep for several days in an airtight container at room temperature.

Ingredients

100 g grated coconut
9g sugar
2 egg whites

Instructions

In a bowl, mix all the ingredients and whisk to obtain a homogeneous mixture.

Boil water for the bain-marie.
Place the bowl in a bain-marie for 10 minutes, whisking regularly.

Preheat the oven to 220°C.

Line a baking sheet with parchment paper.
Shape the rocks into a ball or a point.

Bake for 6 to 7 minutes.
Let cool, serve.
