I made this tahini walnut beet salad to force myself to eat beets. It’s a very sweet vegetable that I’ve always had trouble with. Grate it and season it with tahini allowed me to discover it from a new angle. The tahini and nuts bring a different flavor and crunch. This is a recipe that I have been making regularly ever since.
The extra thing:
- Accompany with Lebanese specialties for a guaranteed trip
- Add chilli powder in spices
- Add freshly chopped cilantro and parsley
Ingredients
500 g cooked beets | |
1 tbsp tahini selon le goût | |
2 tbsp white balsamic vinegar selon le goût | |
1 handful of walnut kernels selon le goût |

Grate the beets using a large grater and place them in a salad bowl.
Crack the walnuts and mix them with the beets. |

Prepare the vinaigrette by mixing the tahini and the vinegar. Dilute with water if too thick.
Mix dressing and beets with walnuts. Adjust seasoning and serve. |
