This recipe for scrambled egg avocado toast is perfect for the evening when you lack the time and energy to cook. Here it is made with a slice of toast, mashed avocado, scrambled eggs, freshly chopped herbs and a little chilli. I love cooking like this, simple, gourmet and unpretentious. I tell you more about the sandwiches here.
The extra thing:
- Cook the eggs in a bain-marie so as not to overcook them and keep them soft
- Serve with a salad
- Sandwiches can be served for brunch
Ingredients
4 slices of bread | |
6 egg | |
2 tbsp fresh herbs | |
1 chilli coupé en fines tranches | |
1 tbsp peanut oil | |
1 tsp salt crystal butter | |
1 avocado bien mûr | |
1 tbsp lemon juice on peut le remplacer par du vinaigre de Xérès |

Toast the slices of bread on a toaster or in the oven using the grill function. They should be golden.

Cut the avocado in 2, remove the pit, scoop out the flesh and pour into a plate.
Mash with a fork, pour in the lemon juice and season. To book. |

Pour the oil and butter into a skillet over low heat.
Crack the eggs and scramble them using a spatula. Season. Cook until the scrambled eggs are slightly runny without being overcooked. |

Assemble the sandwiches: spread the slices of bread with crushed avocado, place scrambled eggs on top.
Sprinkle with freshly chopped herbs and a little sliced chilli. To serve |
