There’s nothing quite like a good applesauce pie. Applesauce pie is super regressive for me. My sister is the best in the world and I have never been able to match her. But I have my recipe that I liked a lot at home, my compote is based on steamed apples and I add vanilla to it.
For those who love this dessert, I have already made several apple pie recipes: the praline apple pie , the fine apple pie and its caramel sauce , the Norman apple brioche pie , the famous and not least tart tatin , and the so gourmet apple pie .
The extra thing:
- Serve warm with a scoop of ice cream or a little whipped cream

Sweet dough

140g butter | |
1 egg | |
75g icing sugar | |
250 g flour | |
2 tbsp ground almonds | |
Compote
|

5 apple golden de préférence | |
1 vanilla pod | |
Trim

3 apple pink lady de préférence | |
1 tbsp apricot jam |

Prepare the sweet pastryMix the ingredients for the sweet dough in a bowl and work by hand to obtain a homogeneous mixture. It is possible to do this step in the tank of a robot. Make a ball with the dough. Film the dough and reserve in the refrigerator for 1 hour.

Prepare the compotePeel, cut and core the apples. Steam them for 8-9 minutes maximum.
Purée and add the seeds of a vanilla pod. Mix and let cool. |

Assemble the piePreheat the oven to 170°C. Cover a baking sheet with parchment paper and place a pie ring (here 22cm in diameter) on it. Roll out the dough, prick it and line the tart ring.
Pour applesauce in an even layer. |

Peel the remaining apples, cut them in half, core and thinly slice.
Arrange the apples on the compote and bake for 15 minutes. |

Heat the apricot jam and brush the apples with the jam using a pastry brush.
Serve warm or cold. |
