Apple Fritters

Introduction

Apple fritters are usually eaten at carnivals, candlelight or on the beach. The contrast between the softness of the donut, the sweetness of the applesauce and the crunchiness of the sugar make it a delicacy that can be enjoyed regardless of age. Donuts should be prepared in advance for proofing time.

1 serving is approximately 9 apple fritters.

The extra thing:

  • Freeze raw, unfilled donuts.

Ingredients

10 cl milk lukewarm
25 g sugar for the dough
60 g sugar to coat the donuts
5 g baker’s yeast
2 egg yolk
200 g flour
1 pinch of salt
50 g butter cold
frying oil
50 g applesauce

Instructions

In a salad bowl, pour lukewarm milk and a pinch of sugar. Sprinkle with yeast. Wait 5-10 minutes for bubbles to form on the surface.

Meanwhile, pour the 200g of flour into the other bowl and place the cold butter cut into pieces. Add the cold butter with your fingertips to the flour to obtain a fine powder.

In the bowl containing the milk, add the rest of the sugar and the egg yolks. Mix the appliance with a fork to dissolve the ingredients.

Mix the 2 preparations using a spatula to obtain a homogeneous mixture. The dough should be smooth and supple.

Flour a work surface with half of the flour intended for kneading and knead the dough until it is elastic.

Oil a salad bowl, place the dough, cover it with a cloth and let swell in a room at room temperature and without drafts for about 1 hour 30 minutes. The dough should have swelled.

Flour a work surface with the rest of the flour intended for kneading and roll out the dough with a rolling pin, expelling any air bubbles. Roll out the dough 3-4cm thick.

Cut the donuts with a cookie cutter and reserve the dough pieces.

Heat the fryer to 160 ° C.
Fry the donuts 2-3 minutes on each side. Drain and set aside.

Fill a pastry bag with compote and stuff the donuts when they are lukewarm.

Roll the donuts in sugar.
To serve.
