The lemon curd is a lemon curd. This preparation is part of the composition of many desserts but can be eaten as a dessert cream or as a spread. It is an alternative to jam or marmalade, more delicious and less sweet.
1 serving is approximately 500g of lemon curd.
The extra thing:
- Replace the lemon with lime or other citrus fruits (orange, tangerine, grapefruit).
- Flavor with aromatic herbs (mint, basil) after adding the butter to prevent them from cooking.

Cut the butter into pieces, set aside.
In a bowl, whisk the sugar, whole eggs, lemon juice and lemon zest together. |

Pour this preparation into a saucepan over low heat and mix with a spatula until the mixture thickens.
When the mixture is thick, lower the heat and pour in the butter and mix so that the butter melts. |

Pour the lemon curd into a dish, cover with cling film on contact and keep in the fridge.
