Lemon crinkles are small, crunchy and fondant English cookies. They are quick to make and are great for a snack or a gourmet breakfast.

Instructions

Whisk the butter and the egg, add the lemon juice and zest.
Add the sugar, flour and baking powder. Mix until well combined. Cover with cling film and refrigerate for 30 min. |

With a tablespoon, take balls of dough of about 30 g.
Roll them in the caster sugar then in the icing sugar. Arrange the dough balls on a baking sheet lined with parchment paper, spacing them apart. |
