The candied fruit raisin cake is a slightly compact and very tasty English cake. It is flavored with vanilla and rum. It is a cake that goes very well with tea or coffee.

Ingredients
120g candied fruit | |
150 g raisins | |
200ml dark rum | |
195 g salt crystal butter | |
195g icing sugar | |
4 egg | |
275g flour | |
1 packet of baking powder | |
1 vanilla pod |
Instructions

Cut the candied fruit into small pieces.
Arrange the candied fruit and raisins in a bowl and drizzle with rum. Let them macerate for at least 6 hours, ideally overnight. |

Melt the salted butter in the microwave. To book.
Drain the candied fruit and reserve the rum. |

In a bowl, pour the icing sugar and scrape the seeds from the vanilla pod into it.
Mix using a spatula to obtain a homogeneous mixture. |

Add the candied fruits and mix well to distribute them.
Then add the eggs and flour and mix again. |

Line a cake tin with parchment paper and pour the batter into it.
Bake for 1h10 at 155°C then 20 minutes at 145°C, to ensure that the cake is well cooked, prick with a skewer, it should come out dry. |

Unmold the cake on a rack and soak it with the reserved rum using a brush while it is hot.
Let cool before serving. |
