Star anise beef is a very popular Chinese specialty. This is a very fragrant braised beef, star anise and spices give the meat delicacy and depth in the mouth.

Ingredients
500g stewing beef (macreuse) | |
15g ginger | |
4 cloves of garlic | |
4 stars star anise | |
2 tbsp star anise powder | |
1 tsp cinnamon | |
1 tbsp untoasted sesame | |
1 clove | |
10 g brown sugar | |
2 tbsp sweet soy sauce | |
1 tbsp salty soy sauce | |
5 tbsp cooking sake | |
1 tbsp peanut oil | |
50cl water | |
1 handful coriander fraîche |
Instructions

Cut the meat into 3-4 cm pieces. To book.
Peel and chop the garlic and ginger together. To book. |

Pour the oil into a wok and bring to high heat.
Brown the garlic/ginger mixture, the star anise stars and the star anise powder for 1 minute |

Pour in the meat, brown for 3 to 4 minutes then pour in the soy sauces and sake.
Mix and cook for 2 minutes. |

Pour everything into a casserole dish, add the cinnamon, sugar, cloves and water and simmer covered over low heat for 95 minutes. Mix regularly.

Chop the cilantro.
Sprinkle the meat with sesame seeds and coriander. To serve. |
