Introduction
To share
Chicken simmered with shiitakes (xianggu du ji) is a Chinese specialty. It is a very fragrant, light and accessible dish. Allow time for rehydrating the shiitakes and for marinating.
The extra thing:
- Use fresh shiitake for even more flavor.
- Serve with rice or a wok of vegetables.
Ingredients
19 cl water | |
2 chicken fillets | |
10 shiitakes déshydratés | |
4cm ginger | |
2 clove of garlic | |
4 stalks cilantro | |
2 tbsp cornstarch | |
1 tbsp fish sauce | |
1 tbsp peanut oil | |
1 tbsp salty soy sauce | |
1 tbsp sweet soy sauce | |
1 tsp sugar | |
1 tsp white pepper en poudre |
Instructions

Rehydrate the shiitakes in a large volume of boiling water for 1 hour.
When they are rehydrated, wring them out and cut them into 4. Set aside. |

Cut the chicken into large pieces and place in the airtight dish.
Prepare the marinade in a mixing bowl: the soy sauces, sugar, white pepper and 1 tablespoon of cornstarch. Mix and pour the marinade over the chicken. Coat and close the dish. Leave to marinate for 1 hour in the refrigerator. |

Peel the garlic and ginger together. To book.
Heat oil in a wok over high heat and add the garlic/ginger mixture, sauté for 2-3 minutes. |

Add the chicken with its marinade and brown for about 5 minutes.

Add shiitakes and fish sauce.
Mix and cook for 2 minutes. |

Add 15 cl of water, cover and simmer for 20 minutes. The sauce should have reduced.

In a bowl, dissolve the tablespoon of cornstarch in 4cl of cold water.
Pour this mixture into the wok and cook for 2 minutes for the sauce to thicken. |

Chop the cilantro. Sprinkle the dish with chopped cilantro.
