The speculoos are small crunchy biscuits very fragrant and emblematic of Belgium. You can prepare the dough the day before.
1 portion corresponds to approximately 20 speculoos.
The extra thing:
- Serve with a gourmet coffee.
- Use the dough to make a tart shell: roll out the dough on a baking sheet without cutting it with a cookie cutter.
- To prepare a homemade 4-spice blend, finely blend cloves, cinnamon, nutmeg and powdered ginger.
- To make a soft butter without having taken it out of the refrigerator first, work the butter by hand, taking care to wear a disposable latex glove.

In a salad bowl, pour the sugar and spices.
Add the egg and butter. To mix together. Pour in the flour as you go, add the salt and the baking powder. |

Work the dough by hand or with a spatula (or in a food processor) to obtain a homogeneous dough.
Form a ball, wrap and leave in the refrigerator for 2 hours. |

Roll out the dough between 2 sheets of baking paper to obtain a thickness of about 4mm.
Leave in the refrigerator for 30 minutes so that the dough hardens and is easier to cut. |

Cut the dough with a cookie cutter or into small rectangles.
Preheat the oven to 190 ° C. |

Bake for about 10 minutes until the cookies are golden. |
